The Costa D’esta Resort in Vero Beach is home to an incredible restaurant, The Wave Kitchen and Bar. Every detail in this beautiful restaurant is designed to make you feel like you are attending an intimate party. We went there for lunch and enjoyed not only the food but the ambience as well. Although the owner’s heritage is Cuban, The Wave is more than just a “Cuban” restaurant. The majority of the dishes that are on the menu are New American with Cuban & Spanish influences. With nearly everything on the menu being made from scratch, the dishes we tasted were not only pleasing to the eye, but also to the palette.
The Avocado Salad with Shrimp was beautifully presented. The avocado tower was made with tomato, red onion, cucumber, and a cilantro vinagrette. This unique blend of ingredients was beyond fresh and gave it a very bright and tangy flavor. Plantain chips are served alongside. The rock shrimp was the most tender I’ve ever had.
Up next was the Grilled Scottish Salmon with Quinoa Bowl. Cucumber, Tomato, Red Onion, Corn, Romaine, and a delicious Citrus Vinaigrette made this dish unforgettable! The salmon was grilled to perfection and melted in my mouth.
We ended the lunch with a carmelized Vanilla Flan. The plate was garnished with a rich strawberry sauce, sweetened whipped cream, and strawberry as a garnish. The flan was smooth, creamy and had a wonderful vanilla flavor.
With beautiful views of the pool area, the Cabana bar, and of course the Atlantic ocean, this is one place I highly suggest you don’t miss on your visit to Vero Beach!
